Chicken Enchiladas
Looking for some dinnertime inspiration? Chiara, ever the
thoughtful friend, has friends whose children are down with RSV and wanted to
take them dinner.. As we have had this in our home, we know what a trying time
this is and what a thoughtful gesture this was. She found the recipe at A Sweet
Pea Chef, adapted it slightly and states that she would make more filling next
time. I appreciate that heads up as my hubby is a meat eater.
