Lizzy had seen the Ballard Message Board and thought to herself ‘YES! I can make my pegboard look like that!’ Its not a corkboard but its the same idea. HERE and HERE I shared one of my go-to sites, Ginna’s Skinny Recipes at Skinnytaste.com. This week I hope to be making some recipes in the evenings (possibly on Sunday if it is an item I can reheat, freeze, etc.) that I can have for breakfast at work. While I am lucky enough to have a cafeteria that makes your food to order where I work, not only is that expense mounting, but I tend to ‘cheat’. First up, I’d like to make these Broccoli and Cheese Mini Egg Omelets. I will tell you now that I will,  most probably, exchange the broccoli for grilled peppers, which I prefer. While meat can be added, and I will probably make a meat version for my husband, I will forego the meat.

Balancing Meal Time




Our Quest To Save Money & Eat Better

While we are avid couponers and save a lot of money by using coupons, we often fail because we forget to get something out to thaw and end up eating more expensive frozen meals or eating out. We work a full time job and have a 1 hour commute back home and this leaves us with little time and little energy or desire to cook upon returning home. In an effort to utilize the savings we have already acquired, I am attempting to schedule what we will be eating and using the crockpot more. So, as we begin this quest, I am sharing todays recipe.

{This turned out fabulous! Since mine had to cook so long (10 hours on low and then warm) I will probably add more liquid or another can of tomatoes next time}

Slow Cooker A. 1. Swiss Steak

Recipe obtained from My Coupon Teacher
2 lb. boneless beef roast, cubed into 1" pieces – Whole eye round roast $3.49/lb.
1/4 c A.1. Original Steak Sauce – $2.99/10 oz.
1 onion, sliced
1 can diced tomatoes – Hunts 4/$5.00
2 T flour
1/4 c water
Toss the cubed beef with the A.1. sauce and place in the slow cooker.  Top with the onions and tomatoes, cover and cook on low 9-10 hours or high 4-5 hours.  Mix flour and water and stir into meat mixture.  Cook, covered, 5 min. or until sauce is thickened. 
As the goal is to save money, serve with healthy foods that  you have acquired on sale.

Banana Bread Muffins



Banana Bread


I have loved Banana Bread fo-eva! The cafeteria where we work has banana bread, but at $1 a slice. Knowing I can make it much cheaper, and lighten it up so that I can have great treats but work on my waist-line, I changed it up a bit and made muffins so I can easily grab and go.


In my version, I switched out the sugar for Splenda. I didn't think of it until after, but next time I will switch the vegetable oil for sugar free applesauce.


Ingredients

  • 1 cup white sugar- I switched to Splenda
  • 1 egg
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 3 ripe bananas, mashed
  • 1/4 cup chopped walnuts
  • 1 teaspoon baking soda


Directions


  1. Preheat oven to 350 degrees F. Place muffin cups in muffin tin, or grease with a little butter.
  2. Mix sugar, oil, and egg until creamy and light yellow. Add bananas and walnuts. Add flour, baking soda, and salt. Stir until completely smooth. Spoon the batter into the muffin tin.
  3. Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.

Sunday breakfasts are always home cooked affairs in my home. It’s one of those family meals we feel, the more the merrier. While we have things to do, generally speaking, Sunday’s are a slow-leisurely affair. Yesterday I shared one of my go-to sites, Ginna’s Skinny Recipes at Skinnytaste.com.
