Slow Cooker Puerto Rican Pork

Typically Puerto Rican Pork is marinated overnight and slow roasted  in the oven. I have had it many times from a friend before I finally asked for the recipe. It might just be my favorite dish!


Ingredients:  


3 lb boneless lean pork shoulder roast (remove fat)
4-5 cloves garlic, crushed
1 tbsp coarse salt
1/2 tsp oregano
1/2 tbsp cumin
1/4 tsp crushed black pepper
3 oranges, juice of (1/2 cup)
2 limes, juice of

Directions: 



Using a sharp knife, cut slits into the pork and place into the crock pot ceramic insert. Combine the remaining ingredients and pour over pork. Rub the seasonings into the slits you made in the pork. Cover with lid and refrigerate overnight. Periodically turn the pork. This ensures it all marinades. On the next day, place insert in the crock pot and cook on low 8 hours. After 8 hours, shred pork using two forks. Remove liquid, saving about 1 cup,  and add pork back to crock. Add the saved liquid back to crock pot. Let it cook 15-30 minutes. We serve with yellow rice and use leftovers in tacos. Enjoy!
