Typically we do Taco Tuesday's every week. We LOVE tacos!

Ingredients
2 lean chicken breasts1 can of black beans, washed and drained
1 can of pinto beans, drained and washed
2 TBS of a clean eating Taco Seasoning mix or homemade
Tostadas ( Look for those that are just corn and oil and no additives)
Toppings: Sauteed or raw vegetables, Greek yogurt (I never use sour cream. Even guests don't notice!), natural cheese, refried beans
Instructions
Add the beans, chicken and seasoning to your crock pot and add a cup of water
Cook on low for 5 hours. At this point, shred the chicken and stir it all together.
Cook for another 15 minutes .
