Come In From The Cold

Stew is one of those comfort meals and so great when it's cold out.
I've done this recipe in the crock pot as well, once I've done
the browning.
Hope you Enjoy!
Beef Stew

1 -1 1/2 lb cubed beef stew meat...
1/2 cup flour
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 cup vegetable oil
1 onion, chopped fine
1 carrot, chopped fine
1/4 cup finely chopped celery, with a few minced leaves
1 tablespoon dried parsley
1 pinch thyme
3 1/2 cups beef broth
2 medium potatoes, diced
2 carrots, diced
2 onions, diced
Directions:
Put flour, salt and pepper in a large ziploc bag.
Heat oil over medium heat in a large dutch oven.
Place meat in bag with the flour and shake until well coated.
Shake off meat pieces and add them to the oil and stir until slightly browned, Add remaining flour from the bag and the finely chopped onion.
Stir until well browned.
Add finely chopped carrot and next 4 ingredients.
Cover and cook over low heat for 1 1/2 hours (stirring every 15 minutes).

CROCK POT RIBS

CROCK POT RIBS

Ingredients:
Ribs (pork or beef)
2 cups bbq sauce + extra to brush
1 cup ketchup
3 tablespoons apple cider vinegar (you can substitute white vinegar)
1/2 cup brown sugar
2 tsp Worcestershire
dash of hot sauce
salt and pepper to taste
Start by putting your ribs in a single layer on a baking sheet. Salt & Pepper to taste. Bake in a 400 degree oven for 15 minutes, then turn them over and bake another 15 minutes. This process will render the extra juice from the meat so the ribs do not BOIL in the crock pot.
In a medium sized bowl, combine bbq sauce, ketchup, vinegar, brown sugar, Worcestershire, and hot sauce. Mix well. Place browned ribs in the crock pot. Pour your sauce over the ribs, and cook on high for 4-6 hours or low for 8-10 hours. After the ribs are ready, brush with remaining bbq sauce. Broil in your oven until bbq sauce gets caramelized! Fall off the bone tender!!

Crockpot Creamy Chicken & Rice Soup

Crockpot Creamy Chicken & Rice Soup

6 cups chicken stock
2 chicken breasts (boneless skinless)
2 bay leaves
2 stalks celery (chopped)
1 medium onion (chopped)
2 carrots (chopped)
salt (to taste)
1 teaspoon lemon pepper

1/4 cup flour
1/2 cup milk
10oz corn

Directions

Step 1
Add everything to the crock pot except the rice, corn, flour and milk. Cover and cook for 8 hours. The chicken will cook in the broth and add more flavor to the soup.
Halfway through cooking add the rice (or you can stir in already cooked rice at the end).

Step 2
About 30 minutes prior to serving, shred the chicken. In a small container with a lid shake together flour and milk really well and stir into soup. Add Corn. Let cook for 30 minutes more to allow the soup to thicken.

Crock Pot Sweet Potatoes

It may seem strange to some, but I have 4 crock pots! I use them for easy meal prep, when it's hot and we don't want to use the oven and, of course, the holidays! Did you know, you can "bake" sweet potatoes in your crock pot? And it's SUPER EASY!!!

Image result for crock pot sweet potatoes with apple juice
Ingredients
6 medium sized sweet potatoes (organic if available)
1 cup of Organic apple juice with no sugar added
1 tablespoon cinnamon
1 teaspoon nutmeg

Directions
Peel your potatoes and cut into chunks and place in crock pot
2) Add 1/2 of the apple juice, all of the cinnamon and nutmeg
3) Cover and cook on low for 6 hours or until potatoes are tender
4) Using a hand blender, blend the sweet potatoes inside the crock pot, adding a little apple juice at a time to make them the consistency that you like.
You can also add more cinnamon and nutmeg or even allspice or ground cloves.  For people who like a sweeter version, honey and/or maple syrup are delicious to add as well.

Slow Cooker Puerto Rican Pork

Typically Puerto Rican Pork is marinated overnight and slow roasted  in the oven. I have had it many times from a friend before I finally asked for the recipe. It might just be my favorite dish!

Ingredients:

3 lb boneless lean pork shoulder roast (remove fat)
4-5 cloves garlic, crushed
1 tbsp coarse salt
1/2 tsp oregano
1/2 tbsp cumin
1/4 tsp crushed black pepper
3 oranges, juice of (1/2 cup)
2 limes, juice of

Directions:

Using a sharp knife, cut slits into the pork and place into the crock pot ceramic insert. Combine the remaining ingredients and pour over pork. Rub the seasonings into the slits you made in the pork. Cover with lid and refrigerate overnight. Periodically turn the pork. This ensures it all marinades. On the next day, place insert in the crock pot and cook on low 8 hours. After 8 hours, shred pork using two forks. Remove liquid, saving about 1 cup,  and add pork back to crock. Add the saved liquid back to crock pot. Let it cook 15-30 minutes. We serve with yellow rice and use leftovers in tacos. Enjoy!

CREAMY BACON CROCKPOT CHICKEN

Ingredients

8 bacon slices
8 boneless, skinless chicken breasts
2 (10 oz) cans roasted garlic cream of mushroom soup
1 cup sour cream
1/2 cup flour (all purpose or gluten free blend)
Salt and pepper to taste

Directions

Place the bacon in a large skillet and cook over medium-low heat until some of the fat is rendered. Be sure that the bacon is still pliable and not crisp. Drain on paper towels. If you use this method, reduce the flour to 1/4 cup. Or dont cook the bacon and proceed with the recipe.
Then wrap one slice of bacon around each boneless chicken breast and place in a 4-5 quart crockpot.
In medium bowl, combine condensed soups, sour cream, and flour and mix with wire whisk to blend. Pour over chicken.
Cover crockpot and cook on low for 6-8 hours until chicken and bacon are thoroughly cooked. You may want to remove the chicken and beat the sauce with a wire whisk so it is very well blended.
Pour sauce over chicken.
