Use It Up Crock Pot Turkey Soup

With Thanksgiving upon us we are always thinking of ways to use that leftover turkey we have. What ways do you use it up? We really enjoy coming up with new ways to stretch the leftovers but Leftover Turkey Soup is a fave in our home!


Ingredients
4 cups of turkey broth (you can make your own from the carcass)
2 tomatoes, diced
3 carrots, sliced into 1/2 inch pieces
3 celery stalks sliced into 1/2 inch pieces
1 medium onion chopped into small pieces
1/4 cup uncooked rice
2 cups diced turkey
This is a clean the fridge time! If you have other leftovers to use up, now is the time.
Direction
In a crock pot, add the broth, tomatoes, carrots, celery, onion and rice. Cover with crock pot lid and cook on low for 6 hours. After the 6 hours, add leftover cooked turkey and any other leftover vegetables you have and cook on low for another hour.
