I
have a family favorite to share! I originally got this recipe from Sandra Lee’s
Semi-Homemade Magazine and it is a great recipe for a quick meal. This is a tried
and true, go-to recipe for me! I have used it for a quick meal when we have
lots of running to do, and even for last minute company. The ingredients are
easy enough to have on hand.
BURRITO
CASSEROLE
Ingredients:
1
- 32oz package of beef and bean burritos (you can use any that you like. We
have switched it up from time to time.)
1 - 14oz can of mild enchilada sauce
1 1/2 cups shredded cheddar cheese ( We actually use the cheese labeled Mexican)
1 - 2.25 oz can slice black olives, drained
Additions optional:
Sour Cream
Diced Tomato
Shredded Lettuce

Directions:
Line
frozen burritos in a single layer in a 13x9 inch microwave safe dish. Microwave
burritos on high, for 6 to 8 minutes or until heated through. Pour enchilada sauce over
the burritos. Sprinkle cheese over the enchilada sauce. Microwave burritos 1 to
2 minutes or until cheese is melted. You can top the whole casserole with the olives, tomato and lettuce, but in our home we
do what we like to our individual portions. Serve immediately.
