Are you drooling yet? This dish is seriously one of my favorites, since originally having it at a work pig out, and is a huge treat when hubby prepares it. Now, when served at events, it has become our most requested recipe (along with Gooey Butter Cake posted HERE & HERE).
Hubby actually prepared this and we served it up at our Saturday Night Supper Club: Spanish Night get-together (posted HERE), and as posted, it met high acclaim.
Puerto Rican Pork
Ingredients:
(1) Pork Shoulder
(1) 28 oz container of Sofrito
(4 packets) Sazon Goya (Coriander & Annatto)
4- 6 T. Goya Adobo seasoning
Directions:
Heavily pierce pork shoulder with knife. Mix 28 oz container of Sofrito (found in freezer section of grocery store), with 4 packets Sazon Goya (Coriander & Annatto), 4- 6 T. Goya Adobo seasoning in a bowl.
Loosen skin & fat from meat without completely removing. Insert some of mixture between skin & fat. Place meat in a container large enough to marinade overnight. 24 hours is optimum. Spread/dump rest of mixture over pork (fat side up),cover & place in refrigerator.
After marinading, place in oven safe roasting pan. Pour remaining marinade mixture over roast. Cover tightly with aluminum foil and place in 275 degree oven for about 8-10 hours, till done. You want this to cook low & slow so it is fall off the bone tender. Do not remove, uncover or look at roast until nearing the 8-10 hour mark. If all has been followed, roast should fall off the bone. Remove from oven. Separate fat and bone from meat, placing meat on serving platter.
This makes a lot. It is an excellent meal for company ( well loved at our Supper Club and family events). If you have leftovers, it can be reheated and served, or use your imagination. We have served leftover meat on good rolls, served on a taco bar. ENJOY!

We have a Puerto Rican Family here!! This is a fantastic recipe, similar to "Ropa Vieja". We like to serve up "Tostones" as an appetizer, then follow with white rice and "Habichuelas negras" (black bean recipe) and finish up with a "Flan de coco" (Coconut Flan) for dessert!!
