Chef Boyardeelicious!


As a busy mom, I am concerned with saving money and getting a meal on the table after a hard day at work. Anything that can cut my prep time, even by using a pre-made food item, as long as a it’s healthy option, is for me! I especially love one-pot meals that are quick and little mess after a long day of work.
Well, Chef  Boyardee is here to help! Not only do they have recipes to get you started, they are also inspiration for their contest! They are giving away groceries for a year as the prize in a recipe contest called Make it Boyardeelicious. Chef  Boyardee fans are invited to submit their own original recipe for a chance to win $500 plus $75 in Chef  Boyardee coupons. Then, at the end of the 10-week campaign, one of the weekly winners will be chosen as the grand prize winner to win a year’s worth of groceries!
To enter, start by visiting and ‘like’ their Chef Boyardee Facebook page, then upload a photo of the finished product of the recipe you created (using Chef Boyardee products).
To help inspire Chef Boyardee fans to enter the contest, they have asked a few of us bloggers  to host a get together using a Chef Boyardee recipe using their products or to create our own recipe using their products. At our little get together, we had 5 adults  and 3 children, enough to get a good viewpoint on the recipe. Hubby and I decided on the Ravioli Lasagna

RAVIOLI LASAGNA

INGREDIENTS

  • PAM® Original No-Stick Cooking Spray
  • 1 cup frozen loose cut leaf spinach
  • 2 cans (15 oz each) Chef Boyardee® Beef Ravioli
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes, drained well
  • 1-1/2 teaspoons dried Italian seasoning
  • 1 cup 1% low-fat cottage cheese
  • 1/2 teaspoon ground black pepper
  • 1 cup shredded Italian blend cheese

DIRECTIONS


  1. Preheat oven to 375°F. Spray 8x8-inch glass baking dish with cooking spray. Place spinach in microwave-safe bowl. Cover with plastic wrap and microwave on HIGH 2 minutes; squeeze spinach dry.
  2. Combine ravioli, drained tomatoes and Italian seasoning in medium microwave-safe bowl. Cover with plastic wrap and microwave on HIGH 3 to 4 minutes or until mixture is hot. Combine cottage cheese, spinach and black pepper in small bowl.
  3. Place half of ravioli mixture in bottom of baking dish. Top with half of cottage cheese mixture and 1/2 cup shredded cheese. Repeat layers. Bake 15 minutes or until cheese is hot and bubbly.



To help us in the preparation of our get together, they Chef sent us a few supplies. Our package included: a nice set of colorful nesting bowls, Le Creuset bakeware, an adorable Kids Curious Chef baking set, a Chef Boyardee chef’s hat, adult and child’s apron, an insulated lunch bag, recipe cards, coupons, and several note pads. Awesome, huh?!!!

Through March 11, 2012, you can submit an original recipe that uses a Chef Boyardee product as an ingredient. Create your recipe and upload a photo of the recipe, and tell how much your family loved it. Each week, they will select a winner chosen based on creativity, family appeal, ease of preparation, and palatable appeal by an expert panel of judges. The weekly winner receives a $500 prize as well as $75 in Chef coupons.Each of the top ten finalists from all the accumulated weeks will have the chance to win the grand prize of free groceries for a year. The winner will be chosen based on a combined score of taste points and voting. The voting period lasts March 26-April 8, 2012. Voters get entered into a daily sweepstakes for the chance to win $100.
