Mini Peanut Butter Cheesecakes

So you've all seen at least one Tasty video by now right? They make everything look so 'Tasty' and easy, right? Well, the family really wanted to try these Mini Peanut Butter Cheesecakes and I just couldn't say no :) 



Mini Peanut Butter Cheesecakes


Here's how you make them:
Watch the video real quick. Form peanut butter sandwiches with Ritz crackers. Place them in the bottom of each cup of a muffin tin. In a large bowl beat together 16 oz cream cheese, 1/2 cup sugar. Then add 1/2 cup peanut butter, 1/2 cup sour cream, 1 tsp vanilla, 2 eggs, and beat again. Pour mixture over each peanut butter sandwich until each cup is 3/4 full. Top with crushed Ritz cracker. Bake for 22 minutes at 275°F. Let cool completely and then refrigerate 2 hours.

CREAM CHEESE BROWNIES



EASY CREAM CHEESE BROWNIES


Ingredients
Brownie
1 (20 ounce) packages fudge brownie mix ( 13x9 size)
1/4 cup water ( or what mix calls for)...
1/3 cup oil ( or what your mix calls for)
2 eggs ( or what your mix calls for)
Topping
1 (8 ounce) packages cream cheese
1/3 cup sugar
1 egg
1/2 teaspoon vanilla
Directions
Preheat oven to 350 F degrees.
Prepare the brownie mix according to package directions (water, oil, eggs).
Pour into a greased 13x9-inch baking pan.
Beat cream cheese with electric mixer on medium speed until smooth.
Add sugar and mix. Add vanilla and egg; mix until well-blended.
Place cheese mixture in dollops over the whole pan, leaving some brownie showing in between.
Cut or swirl through batter several times with a knife or fork for a marbled effect. It can be tricky to get a good marble effect so be careful not to over work it.
Bake for 35 to 40 minutes. Cool; cut into squares. (These will also freeze well).

1 cup of Bisquick
1 lb cooked sausage
4 eggs beaten
1 cup of shredded Cheddar cheese

350 degrees 20 minutes.

Best Lemon Sheet Cake



Best Lemon Sheet Cake 

~ MOIST too, serve warm, or cold

Ingredients
1 duncan hines moist deluxe lemon cake mix
1 c buttermilk 
1 3oz. lemon instant pudding mix (dry)
ICING~
4 cups confectioner's sugar
1/3 cups bottled lemon juice
3 Tbsp vegetable oil
3 Tbsp water

Directions
1 In large bowl, stir together dry cake mix and pudding mix. In another bowl, combine all wet ingredients and eggs that the cake mix calls for plus the buttermilk.(where your box reads the amount of water (1 1/3 cup usually), put in 1 cup water and 1/3 cup lemon juice to make the cake even more lemon tasting, if you like) Beat with mixer until blended. Add to dry mixture and beat until combined.
Bake in a greased 9x13 baking pan in a preheated 350 degree oven for the time the cake mix box calls for...depending on your oven. It will require a couple minutes longer baking time than cake mix box calls for because of the extra moisture produced by the milk. Stick a toothpick in the center to check for doneness.

2 ICING: Combine water, oil, powdered sugar and lemon juice with a mixer until smooth. Add one more tablespoon of water if consistency isn't saucy. "Glaze" the cake when just a little cooled. Do not over glaze it because the icing is sweet. Just a THIN layer is required

Peanut Butter Cup Crack Brownies

Start off with a favorite fudge brownie recipe, sprinkled on a layer of mini Reese's peanut butter cups, then added the classic Rice Krispie layer, this time flavored with melted chocolate and peanut butter. The results? Mind-blowing. Addictive. Amazingly good.


Ingredients:

1/2 cup all-purpose flour
1/3 cup Hershey's cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (1/2 cup) unsalted butter, melted
1 cup granulated sugar
pinch of vanilla powder (or 1 teaspoon vanilla extract)
2 eggs

1 and 1/2 cups mini unwrapped Reese's peanut butter cups

3/4 cup milk chocolate chips
1/2 cup peanut butter 
1/2 tablespoon unsalted butter
1 cup Rice Krispies

Ingredients:

For the Blueberry French Toast Casserole:

1 1/2 loaves French Bread, cut into cubes
4 oz. cream cheese
1 tablespoon milk
1/2 cup powdered sugar
1 cup blueberries
1 cup milk
5 eggs
2 teaspoons vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup maple syrup

For the Blueberry Syrup:

1 cup cold water
2 tablespoons corn starch
1/2 cup sugar
1 cup blueberries

    One Minute Peanut Butter Cake



    Hubby really wanted dessert last night after dinner and requested cake. Normally I am the one with the sweet tooth (I still am.lol) But, due to trying to lose the weight I have packed on, there was no way I wanted to chance making an entire cake. An entire cake that he'd probably eat one or two pieces and I would be forced (yeah, someone is holding a gun to my head) to eat the rest. So, remembering I'd seen a one minute cake on Pinterest, I went in search of it to treat the hubby. I stupidly forgot to take pictures, so I am borrowing hers to illustrate what took place.



    So, the recipe comes from Cassie over at Back to Her Roots. She says this cake can be made in one minute  and that consists of 30 seconds mixing and 30 seconds in the miscrowave). We'll see. She did also make a good point. This is an excellent option when you need to focus on portion control.

    I have to say that this cake wowed him! It took me no time at all to whip it up after he said how nice a cake would be and he said it was quite tasty and this should be on the keeper list! I love that there isn't a cake sitting around to tempt me.

    Oh, and she also has a 90 Second Nutella Cake. I will have that one, one day. Love Nutella.








    One Minute Peanut Butter Cake


    Serves One

    Ingredients:


    • 1 egg, beaten
    • 1 tablespoon brown sugar
    • 1/2 teaspoon baking powder
    • 1 heaping tablespoon flour
    • 2 tablespoons peanut butter
    • 1 teaspoon milk
    • 1 tablespoon powdered sugar (give or take)

    Directions:

    1. In a small bowl, whisk together egg, brown sugar, baking powder, peanut butter and flour.
    2. Pour batter into a greased ramekin. Microwave for 30 seconds.
    3. While the cake is microwaving, stir together milk and powdered sugar, adding more powdered sugar if necessary to thicken frosting.
    4. Remove cake from ramekin (or don’t), pour frosting over top.

    Let's Make It: Starbuck's Blueberry Scones




     Starbuck's Blueberry Scones


    Preheat oven to 375 degrees
    Large baking sheet with silpat or lined with parchment paper

    Ingredients

    2 Cups all-purpose flour
    2 tsp baking powder
    1 egg
    1 Tbsp vanilla extract
    1/2 tsp sea salt
    6 Tbsp fine baker's sugar
    1/2 cup ice cold butter
    1/2 cup ice cold whipping cream
    1 pint of fresh blueberries

    For the topping
    1 egg beaten
    1 Tbsp whipping cream
    Wilton's Sugar - large crystals

    Cut butter into cubes and refrigerate until ready to use.

    Sift the flour, salt, baking powder and sugar into a large bowl.
    Cut the butter into the flour mixture with pastry blender until resembles coarse meal

    In a smaller bowl whisk the egg, cream and vanilla - add to the dry mixture mixing with a fork, and stir until just combined - do not over mix!

    Stir in fresh blueberries.

    Pour the dough mix onto a lightly floured board and pat into a 7 inch 1 to 1 1/2 inch high disk. Cut into in half then quarters and then in eights as evenly as possible.

    Place the scones on a baking sheet with silpat or parchment paper - this ensures even browning on the bottom

    Mix 1 egg with the 1 Tbsp of cream and brush the tops with the cream-egg mixture then sprinkle generously with the sugar crystals.

    Bake at 375 degrees for 17 minutes and no longer! This will ensure a moister scone than normally expected.
